Broccoli and Cheese Stuffed Chicken Breast
Ingredients:
For Broccoli and Cheese Filling:
- 1 cup broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 1 clove garlic, minced
- Salt and pepper to taste
For Chicken Breast:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon paprika (optional, for seasoning)
For Coating:
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For Egg Wash:
- 2 eggs, beaten
Preparation:
Step 1: Preheat Oven Preheat your oven to 375°F (190°C).
Step 2: Prepare Broccoli and Cheese Filling In a bowl, combine finely chopped broccoli, shredded cheddar cheese, softened cream cheese, minced garlic, salt, and pepper. Mix well to create a uniform filling.
Step 3: Butterfly Chicken Breasts Place each chicken breast on a cutting board and carefully butterfly them by slicing horizontally, but not all the way through. Open the breasts like a book.
Step 4: Season and Add Filling Season the inside of each butterflied chicken breast with salt, pepper, and paprika. Spoon the broccoli and cheese filling evenly onto one side of each breast.
Step 5: Fold and Seal Fold the other side of each chicken breast over the filling, creating a stuffed pocket. Use toothpicks to secure the edges and keep the filling in place.
Step 6: Prepare Coating In a shallow dish, combine breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper.
Step 7: Coat Chicken Dip each stuffed chicken breast into the beaten eggs, ensuring they are well-coated. Then, coat them in the breadcrumb mixture, pressing gently to adhere the coating.
Step 8: Sear in a Pan In an oven-safe skillet, heat olive oil over medium-high heat. Sear the coated chicken breasts for 2-3 minutes on each side until golden brown.
Step 9: Finish in the Oven Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is crispy.
