Chili Oil Potato Noodles

Ingredients:

  • 8 oz potato noodles (or your favorite noodle type)
  • 2 medium-sized potatoes, peeled and thinly sliced
  • 3 tablespoons chili oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon black vinegar
  • 1 teaspoon sugar
  • 1/2 cup scallions, chopped
  • Salt and pepper to taste
  • Sesame seeds and additional chili oil for garnish (optional)

Steps:

Step 1: Cook the potato noodles according to the package instructions. Drain and set aside.

Step 2: In a pan, heat chili oil over medium heat. Add minced garlic and sauté until fragrant.

Step 3: Add thinly sliced potatoes to the pan and cook until they are tender and slightly golden.

Step 4: In a small bowl, mix soy sauce, black vinegar, and sugar.

Step 5: Pour the soy sauce mixture over the potatoes and stir to combine.

Step 6: Add the cooked potato noodles to the pan, tossing them with the potatoes and sauce until well coated.

Step 7: Season with salt and pepper to taste.

Step 8: Add chopped scallions and continue to toss until everything is heated through.

Step 9: Optional: Garnish with sesame seeds and a drizzle of additional chili oil.
