Railway Mutton Curry

Ingredients:

  • 500g mutton, cut into pieces
  • 2 large onions, finely sliced
  • 2 tomatoes, pureed
  • 1/4 cup vegetable oil
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Steps:

Step 1: Heat vegetable oil in a heavy-bottomed pot. Add sliced onions and sauté until golden brown.

Step 2: Add ginger-garlic paste and cook until the raw smell disappears.

Step 3: Stir in coriander powder, cumin powder, turmeric powder, and red chili powder. Cook the spices for a couple of minutes.

Step 4: Add mutton pieces and brown them on all sides.

Step 5: Pour in the pureed tomatoes and cook until the oil separates from the masala.

Step 6: Add salt and enough water to cover the mutton. Bring it to a boil, then reduce the heat to simmer. Cover and cook until the mutton is tender.

Step 7: Sprinkle garam masala and garnish with fresh coriander leaves.
