Chicken Croquettes: for a Super Tasty Aperitif

Ingredients:

  • 2 cups cooked chicken, finely shredded
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup fresh parsley, finely chopped
  • 2 cups breadcrumbs
  • 2 eggs, beaten
  • Oil for frying

Steps:

Step 1: In a saucepan, melt butter over medium heat. Add flour and cook, stirring continuously, until the mixture forms a smooth paste (roux).

Step 2: Gradually whisk in milk to the roux, ensuring there are no lumps. Cook the mixture until it thickens into a creamy sauce.

Step 3: Add shredded chicken, salt, black pepper, and nutmeg to the sauce. Stir well to combine. Cook for a few minutes until the mixture thickens further.

Step 4: Stir in chopped parsley and remove the mixture from heat. Allow it to cool completely.

Step 5: Shape the cooled chicken mixture into small cylindrical or oval croquettes.

Step 6: Roll each croquette in breadcrumbs, dip into beaten eggs, and coat with breadcrumbs again.

Step 7: Heat oil in a frying pan over medium-high heat. Fry the chicken croquettes until they are golden brown on all sides.

Step 8: Place the fried croquettes on a paper towel to absorb excess oil.

Step 9: Serve hot and enjoy the crispy exterior and creamy interior of these Chicken Croquettes.
