Ingredients:

  • 2 cups whole wheat flour (atta)
  • 2 tablespoons semolina (sooji)
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon ajwain (carom seeds)
  • 1 teaspoon salt (adjust to taste)
  • Water, as needed for kneading
  • Oil for frying

Cooking Steps:

Step 1: In a large mixing bowl, combine whole wheat flour, semolina, ghee, ajwain, and salt.

Step 2: Gradually add water and knead the ingredients into a firm and smooth dough. Allow it to rest for at least 15-20 minutes.

Step 3: Divide the dough into small portions and roll each portion into a ball.

Step 4: Roll out each ball into a thin sheet using a rolling pin. Ensure it's not too thick for a crisp result.

Step 5: Using a knife or a namakpara cutter, cut the rolled sheets into small diamond or square shapes.

Step 6: Heat oil in a deep pan or kadai for frying. Ensure the oil is hot but not smoking.

Step 7: Carefully slide the namakparas into the hot oil and fry until they turn golden brown and crispy.

Step 8: Remove the namakparas from the oil and place them on paper towels to absorb excess oil.

Step 9: Allow them to cool completely before storing in an airtight container.
