Zero Oil Chicken Curry

Ingredients:

  • 1 kg chicken, cleaned and cut into pieces
  • 2 large onions, finely chopped
  • 3 tomatoes, pureed
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Steps:

Step 1: In a non-stick pan, dry roast cumin seeds until aromatic.

Step 2: Add chopped onions and sauté until golden brown. If needed, you can add a splash of water to prevent sticking.

Step 3: Add ginger-garlic paste and sauté until the raw smell disappears.

Step 4: Stir in the pureed tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the mixture releases oil.

Step 5: Add chicken pieces to the pan and cook until they are well-coated with the spice mixture.

Step 6: Whisk yogurt and gradually add it to the chicken, stirring continuously.

Step 7: Cover and cook the chicken on low heat until tender, stirring occasionally. If the mixture becomes too dry, add a little water.

Step 8: Once the chicken is cooked, sprinkle garam masala and salt. Mix well.

Step 9: Garnish with fresh coriander leaves before serving.
