Homemade Pumpkin Spice Roll Cake

Ingredients:

For the Pumpkin Spice Cake:

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional)

For the Cream Cheese Filling:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Steps:

For the Pumpkin Spice Cake:

Step 1: Preheat your oven to 375°F (190°C). Grease and line a 10x15-inch jelly roll pan with parchment paper.

Step 2: In a bowl, sift together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.

Step 3: In a separate large bowl, beat eggs and sugar until thick and pale.

Step 4: Add pumpkin puree and vanilla extract to the egg mixture. Mix until well combined.

Step 5: Gradually fold in the dry ingredients until just combined.

Step 6: Pour the batter into the prepared jelly roll pan, spreading it evenly.

Step 7: Bake in the preheated oven for 12-15 minutes or until the cake springs back when touched.

Step 8: While the cake is baking, prepare a clean kitchen towel by sprinkling it with powdered sugar.

Step 9: Once baked, immediately turn the cake onto the prepared towel. Peel off the parchment paper and roll the cake and towel together starting from the short side. Let it cool completely.

For the Cream Cheese Filling:

Step 10: In a bowl, beat cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.

Step 11: Once the pumpkin spice cake is completely cooled, gently unroll it and spread the cream cheese filling evenly over the surface.

Step 12: Carefully roll the cake back up, this time without the towel.

Step 13: Wrap the Pumpkin Spice Roll Cake in plastic wrap and refrigerate for at least 1-2 hours before serving.

Step 14: Optional: Dust the top with powdered sugar before serving.
