Healthy Sindhi Koki

Ingredients:

  • 2 cups whole wheat flour (atta)
  • 1 large onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon carom seeds (ajwain)
  • Salt to taste
  • 2 tablespoons ghee (clarified butter), melted
  • Water (as needed for kneading)
  • Ghee or oil (for cooking)

Cooking Steps:

Step 1: In a mixing bowl, combine whole wheat flour, chopped onion, green chilies, coriander leaves, mint leaves, cumin seeds, carom seeds, and salt.

Step 2: Add melted ghee to the mixture and mix well.

Step 3: Gradually add water and knead the mixture into a firm and smooth dough. Allow it to rest for 15-20 minutes.

Step 4: Divide the dough into equal portions and shape them into balls.

Step 5: Take a portion of the dough, flatten it slightly, and roll it out into a round disc on a floured surface.

Step 6: Heat a griddle or tawa over medium heat. Place the rolled Koki on the hot surface.

Step 7: Cook each side with ghee or oil until golden brown spots appear, ensuring it is cooked through.

Step 8: Repeat the process for the remaining portions.

Step 9: Serve Sindhi Koki hot with yogurt, pickle, or any condiment of your choice.
