One Pot Chicken Risoni with Crispy Salami

Ingredients:

  1. 1 pound (about 450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  2. 1 cup orzo (risoni)
  3. 1/2 cup sliced crispy salami
  4. 1 onion, finely chopped
  5. 3 cloves garlic, minced
  6. 1 red bell pepper, diced
  7. 1 cup cherry tomatoes, halved
  8. 3 cups chicken broth
  9. 1 teaspoon dried thyme
  10. 1 teaspoon smoked paprika
  11. Salt and pepper to taste
  12. Olive oil for cooking
  13. Fresh parsley for garnish

Instructions:

Step 1: In a large, deep skillet or pot, heat olive oil over medium-high heat.

Step 2: Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.

Step 3: In the same pot, add a bit more olive oil if needed. Sauté the chopped onion and minced garlic until softened.

Step 4: Add the orzo and cook for 2-3 minutes, stirring occasionally until it starts to toast slightly.

Step 5: Stir in the crispy salami, diced red bell pepper, and halved cherry tomatoes.

Step 6: Return the cooked chicken to the pot.

Step 7: Sprinkle dried thyme and smoked paprika over the ingredients. Season with salt and pepper to taste.

Step 8: Pour in the chicken broth and bring the mixture to a simmer.

Step 9: Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the orzo is cooked and has absorbed the liquid.

Step 10: Once cooked, fluff the orzo with a fork and ensure the chicken is fully cooked.

Step 11: Garnish with fresh parsley before serving.
