Veggie Laksa

Ingredients:

For the Laksa Paste:

  • 2 stalks lemongrass, chopped
  • 4 shallots, peeled and chopped
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 2 red chilies, deseeded and chopped
  • 1 tablespoon coriander powder
  • 1 teaspoon ground turmeric
  • 1 tablespoon curry powder
  • 2 tablespoons vegetable oil

For the Laksa Soup:

  • 1 can (400ml) coconut milk
  • 4 cups vegetable broth
  • 200g rice noodles, cooked according to package instructions
  • 1 cup tofu, cubed
  • 1 cup bean sprouts
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • Fresh cilantro and lime wedges for garnish

Instructions:

Step 1: In a blender, combine all Laksa Paste ingredients and blend into a smooth paste.

Step 2: In a large pot, heat vegetable oil over medium heat. Add the Laksa Paste and sauté for 2-3 minutes until fragrant.

Step 3: Pour in coconut milk and vegetable broth, stirring well. Bring to a gentle simmer.

Step 4: Add tofu, sliced red bell pepper, and julienned carrot. Simmer for 10-15 minutes until vegetables are tender.

Step 5: Meanwhile, prepare rice noodles according to package instructions.

Step 6: Once the soup is ready, adjust seasoning if needed.

Step 7: To serve, divide cooked rice noodles among bowls. Ladle the Veggie Laksa soup over the noodles.

Step 8: Garnish with bean sprouts, fresh cilantro, and lime wedges.

Step 9: Enjoy the aromatic and comforting Veggie Laksa, reveling in the harmonious blend of spices and textures in every spoonful.
