Homemade Pasta

Ingredients:

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1/2 teaspoon salt
  • Semolina flour or additional all-purpose flour for dusting

Instructions:

  1. On a clean surface or in a large mixing bowl, create a mound with the all-purpose flour. Make a well in the center.
  2. Crack the eggs into the well and add salt.
  3. Using a fork, gradually incorporate the flour into the eggs, starting from the inner rim of the well. Be careful not to break the well's walls.
  4. Once the dough starts coming together, use your hands to knead it into a rough ball.
  5. Knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a bit more flour.
  6. Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes. This allows the gluten to relax, making the dough easier to roll.
  7. After resting, cut the dough into manageable sections. Take one section and roll it out on a floured surface until it reaches your desired thickness.
  8. If you have a pasta machine, you can use it to roll and cut the pasta into your preferred shape. Alternatively, you can hand-cut the pasta into shapes like fettuccine or pappardelle.
  9. Dust the cut pasta with semolina or flour to prevent sticking.
  10. Cook the fresh pasta in boiling, salted water for 2-4 minutes, depending on thickness. Fresh pasta cooks faster than store-bought dried pasta.
  11. Drain the pasta and toss it with your favorite sauce or simply drizzle with olive oil and sprinkle with Parmesan cheese.
