Homemade Pistachio Paste

Ingredients:

  • 1 cup shelled pistachios (unsalted and roasted)
  • 2 tablespoons neutral oil (like grapeseed or vegetable oil)
  • 1-2 tablespoons honey or powdered sugar (optional, depending on sweetness preference)

Instructions:

  1. Place the shelled pistachios in a food processor or high-powered blender.
  2. Pulse the pistachios until they form a coarse powder.
  3. With the processor running, gradually add the neutral oil. Continue processing until the mixture becomes smooth and reaches the desired consistency.
  4. If you prefer a sweeter pistachio paste, add honey or powdered sugar to taste. Blend again until well combined.
  5. Stop and scrape down the sides of the processor or blender as needed to ensure an even texture.
  6. Taste the pistachio paste and adjust the sweetness or texture if necessary.
  7. Transfer the pistachio paste to a clean, airtight container.
  8. Store the pistachio paste in the refrigerator for freshness. It can be used in various recipes, such as pistachio ice cream, pastries, or even as a spread.
