Easy Lasagna Cups

Ingredients:

  • 12 lasagna noodles, cooked al dente
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • Fresh basil or parsley for garnish (optional)

Assembly and Baking:

Step 1: Preheat the oven to 375°F (190°C) and grease a muffin tin.

Step 2: In a bowl, mix ricotta cheese, shredded mozzarella, grated Parmesan, egg, oregano, basil, garlic powder, salt, and pepper. Set aside.

Step 3: Cut the cooked lasagna noodles in half.

Step 4: Place one half of a noodle in each muffin cup, allowing the ends to hang over.

Step 5: Spoon a small amount of marinara sauce into each cup.

Step 6: Add a spoonful of the cheese mixture on top of the sauce.

Step 7: Repeat the layers with another half noodle, sauce, and cheese.

Step 8: Fold the overhanging noodle ends over the top to form a "cup."

Step 9: Top each cup with an extra dollop of marinara and a sprinkle of mozzarella.

Step 10: Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

Step 11: Allow the Lasagna Cups to cool for a few minutes before removing them from the muffin tin.

Step 12: Garnish with fresh basil or parsley if desired and serve.
