Mushroom Pandhra Rassa

Ingredients:

  1. 250g mushrooms
  2. 1 cup grated coconut (200 kcal)
  3. 2 onions, finely chopped
  4. 2 tomatoes, pureed
  5. 2 tsp ginger-garlic paste
  6. 1 tsp mustard seeds
  7. 1 tsp cumin seeds
  8. 1/2 tsp turmeric powder
  9. 1 tsp red chili powder
  10. 1 tsp coriander powder
  11. 2 tbsp oil (180 kcal)
  12. Salt to taste

Cooking Steps:

Step 1: Heat oil in a pan, add mustard seeds, cumin seeds, and let them splutter.
Step 2: Sauté chopped onions until golden brown, then add ginger-garlic paste.

Step 3: Add tomato puree, turmeric powder, red chili powder, and coriander powder. Cook until oil separates.
Step 4: Add mushrooms, sauté until they release water, then cover and cook until mushrooms are tender.

Step 5: In a separate pan, roast grated coconut until golden brown.

Step 6: Grind roasted coconut into a smooth paste and add it to the mushroom mixture.

Step 7: Adjust consistency with water, add salt, and simmer until the flavors meld.
Step 8: Garnish with fresh coriander and serve hot with rice or bread.
