Pork and Potato Skewers

Ingredients:

  • 1 pound pork loin, cut into cubes
  • 4 medium-sized potatoes, peeled and cut into chunks
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Steps:

Step 1: In a bowl, whisk together olive oil, soy sauce, Dijon mustard, minced garlic, dried thyme, salt, and pepper to create the marinade.
Step 2: Place the pork cubes in the marinade, ensuring they are well-coated. Allow to marinate for at least 30 minutes, or preferably longer for enhanced flavor.

Step 3: Boil the potato chunks until they are slightly tender but still firm. Drain and let them cool.
Step 4: Preheat the grill or grill pan over medium-high heat.

Step 5: Thread marinated pork cubes and boiled potato chunks alternately onto the soaked wooden skewers.
Step 6: Grill the skewers for about 10-15 minutes, turning occasionally, until the pork is cooked through and the potatoes are golden brown.

Step 7: Serve the Pork and Potato Skewers hot, accompanied by your favorite dipping sauce or a side salad.
