Chicken Lazeez - started out to make an egg dish, but turned into chicken! but this gravy is the star of the day.

Chicken Lazeez

Preparation time: 10 minutes

Cooking time: 25-30 minutes

Serves: 2-4

Ingredients

For Chicken Lazeez

  • 2 tbsp oil
  • 4-5 black peppercorns
  • 2-3 cloves
  • 1 green cardamom
  • ¼ mace
  • 1 large onion, finely chopped
  • 1 dry kashmiri red chili, broken into half
  • 1 tbsp ginger garlic paste
  • 1 heaped tbsp degi red chili powder
  • 1 tbsp coriander powder
  • 1 heaped tsp turmeric powder
  • 1 cup curd, beaten
  • Salt to taste
  • 1 cup fresh tomato puree
  • 1-2 tbsp ghee
  • Sauteed chicken
  • 1 ⅓ cups water
  • 1 tbsp tender coriander stems, finely chopped
  • Salt to taste
  • ¼ tsp sugar
  • Sauteed vegetables

For Chicken Marination

  • 1 kg chicken (thighs & drumsticks)
  • Salt to taste
  • ½ tbsp ginger garlic paste
  • 1 tsp degi red chili powder
  • ¼ tsp coriander powder
  • 1 tbsp dry fenugreek leaves
  • 1 tbsp oil
  • 1 tbsp mustard oil

For Sauteing Chicken

  • 1 tbsp oil
  • Marinated chicken

For Sauteing Vegetables

  • 1 tbsp oil
  • 1 large onion, diced
  • 1 large tomato, diced
  • 1 large capsicum, diced
  • Salt to taste

For Garnish

  • Coriander sprig

Process

For Chicken Lazeez

  1. In a non-stick kadai or wok, add oil. Once it's hot, add black peppercorns, cloves, green cardamom, mace and let it splutter well.
  2. Add onions, dry kashmiri red chili and saute until translucent.
  3. Add ginger garlic paste and cook for a minute.
  4. Add degi red chili powder, coriander powder, turmeric powder, curd and cook for a while.
  5. Add salt to taste, fresh tomato puree and cook for 10-12 minutes on medium flame.
  6. Add ghee, sauteed chicken and mix well.
  7. Add water to adjust the consistency, tender coriander stems and simmer for 3-4 minutes until thickened.
  8. Finish with salt to taste, sugar, sauteed vegetables and cook for 2-3 minutes.
  9. Transfer to a serving dish and garnish with coriander sprig.
  10. Serve hot with roti or naan.

For Chicken Marination

  1. In a bowl, add chicken, salt to taste, ginger garlic paste, degi red chili powder, coriander powder, dry fenugreek leaves, oil, mustard oil and mix well.
  2. Keep it aside to marinate for 10-12 minutes.

For Sauteing Chicken

  1. In a pan, add oil. Once it's hot, add marinated chicken and cook for 2-3 minutes on both sides until half cooked.
  2. Transfer to a bowl and keep aside for further use.

For Sauteing Vegetables

  1. In a pan, add oil. Once it's hot, add onion, tomato, capsicum, salt to taste and toss on high flame for 2-3 minutes.
  2. Transfer to a tray or bowl and keep aside for further use.
