Sweet Potato Pie

Ingredients

8 twisted pies

  • 160g Sweet Potato (Net weight)
  • 10g Butter (Salted or unsalted, either is fine)
  • 20g Sugar
  • 30g Milk 30g

Frozen Puff Pastry Sheets 2 sheets

*Thaw in advance

  • 1 Egg Yolk
  • 1/2tsp Water

Black Sesame Seeds

【Directions】

①Peel and thinly slice the sweet potato. Soak it in water for 10 minutes. Rinse thoroughly with water to remove impurities.

②Drain the sliced sweet potato and microwave at 600W for 3 and a half minutes to soften. Preheat the oven to 190°C at this point.

③Mash the softened sweet potato and mix in butter, sugar, and milk in that order. Adjust the amount of milk depending on the moisture content of the sweet potato.

④Roll out two frozen puff pastry sheets. Spread the sweet potato paste from step ③ on one sheet and cover it with the other sheet.

*In the video, it's rolled out to a size of 24cm x 16cm.

⑤Press lightly from the top to shape it. Cut into 3cm-wide strips.

⑥Place the cut pieces from step ⑤ on parchment paper. Brush with beaten egg yolk on top and sprinkle black sesame seeds over the entire surface.

⑦Flip it over and repeat the process, brushing with egg yolk and sprinkling black sesame seeds.

Twist the edge of the pie.

⑧Bake in a preheated oven at 190°C for 16 minutes, and it's done!
