Suji Vapa Pitha

Ingredients:

  • 1 cup semolina (suji)
  • 1/2 cup jaggery, grated
  • 1/2 cup coconut, grated
  • 1/4 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • A pinch of salt
  • Water (as needed for consistency)

Calories per serving (approximate): 150 kcal

Steps:

  1. Prepare Semolina Mixture: In a mixing bowl, combine semolina, grated jaggery, grated coconut, ghee, cardamom powder, and a pinch of salt. Mix well to form a crumbly mixture.
  2. Add Water: Gradually add water to the mixture, stirring continuously, until it reaches a thick batter consistency. Ensure there are no lumps.
  3. Rest the Batter: Allow the batter to rest for 15-20 minutes, allowing the semolina to absorb the moisture and achieve a soft texture.
  4. Grease Moulds: Grease the molds or small cups that will be used for steaming the pitha.
  5. Fill Moulds: Fill each mould with the prepared semolina batter, leaving a little space for the pitha to rise.
  6. Steam: Steam the Suji Vapa Pitha in a steamer for approximately 20-25 minutes or until a toothpick inserted comes out clean.
  7. Cool and Serve: Once steamed, let the pitha cool for a few minutes. Gently remove them from the molds. Serve at room temperature.

Note: Suji Vapa Pitha can be enjoyed on its own or paired with a dollop of ghee for added richness. It's a delightful accompaniment to festive celebrations.
