Ingredients:

For the Pie Crust:

  1. 1 1/4 cups all-purpose flour
  2. 1/2 cup unsalted butter, chilled and cubed (960 kcal)
  3. 1/4 cup granulated sugar
  4. A pinch of salt
  5. 3 tbsp ice water

For the Pumpkin Filling:

6. 2 cups canned pumpkin puree (400 kcal)

  1. 3/4 cup brown sugar
  2. 1 tsp ground cinnamon
  3. 1/2 tsp ground ginger
  4. 1/4 tsp ground cloves
  5. 1/2 tsp salt
  6. 3 large eggs
  7. 1 cup evaporated milk (340 kcal)
  8. Whipped cream for serving

Cooking Steps:

Step 1: Prepare Pie Crust

  • In a food processor, combine flour, chilled butter cubes, granulated sugar, and a pinch of salt. Pulse until the mixture resembles coarse crumbs.
  • Add ice water gradually, pulsing until the dough comes together. Form into a disk, wrap in plastic, and chill for at least 30 minutes.

Step 2: Roll Out Crust

  • Roll out the chilled pie crust on a floured surface and place it into a 9-inch pie dish. Trim excess and crimp the edges.

Step 3: Pre-bake Crust

  • Pre-bake the crust in a preheated oven at 375°F (190°C) for 10 minutes to set.

Step 4: Prepare Pumpkin Filling

  • In a bowl, whisk together pumpkin puree, brown sugar, cinnamon, ginger, cloves, salt, eggs, and evaporated milk until well combined.

Step 5: Fill and Bake

  • Pour the pumpkin filling into the pre-baked crust. Bake in the preheated oven for 45-50 minutes or until the filling is set and a toothpick comes out clean.

Step 6: Cool and Serve

  • Allow the pumpkin pie to cool completely before serving.
  • Slice, serve with a dollop of whipped cream, and relish the seasonal perfection of Pumpkin Pie.
