Soft Lemon Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup plain yogurt
  • 1/4 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice

Steps:

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a cake pan.

Step 2: In a bowl, whisk together flour, baking powder, baking soda, and salt.

Step 3: In a separate large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition.

Step 4: Mix in plain yogurt, fresh lemon juice, lemon zest, and vanilla extract until well combined.

Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 8: While the cake is cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice.
