Pasta with Chickpeas is Better than Meat Sauce Pasta when Cooked this Way
Ingredients:
- 8 oz pasta (penne, fusilli, or your preferred type)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- Grated Parmesan cheese (for serving)
- Fresh basil or parsley, chopped (for garnish)
Cooking Steps:
Step 1: Cook the pasta according to package instructions. Drain and set aside.
Step 2: In a large skillet, heat olive oil over medium heat. Add finely chopped onions and cook until softened.
Step 3: Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
