Toasted Chicken Mayo Sandwich

Ingredients:

  1. Cooked and shredded chicken - 1 cup
  2. Mayonnaise - 3 tablespoons
  3. Dijon mustard - 1 teaspoon
  4. Celery - 1 stalk, finely chopped
  5. Red onion - 2 tablespoons, finely chopped
  6. Salt and pepper - to taste
  7. Bread slices - 8
  8. Butter - for spreading

Steps:

Step 1: In a bowl, mix shredded chicken, mayonnaise, Dijon mustard, chopped celery, red onion, salt, and pepper.
Step 2: Spread a generous amount of the chicken mayo mixture on one side of each bread slice.

Step 3: Assemble sandwiches by placing two slices together with the chicken mayo side facing inwards.
Step 4: Lightly butter the outer sides of the assembled sandwiches.

Step 5: Toast the sandwiches in a pan or sandwich press until golden brown and the filling is warmed through.
