Ingredients:

For the Muffins:

  1. 2 cups all-purpose flour
  2. 1 cup granulated sugar
  3. 1 tablespoon baking powder
  4. 1/2 teaspoon salt
  5. 1/2 cup unsalted butter, melted
  6. 2 large eggs
  7. 1 cup milk
  8. 1 teaspoon vanilla extract
  9. 1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)

For the Streusel Topping:

  1. 1/4 cup all-purpose flour
  2. 2 tablespoons granulated sugar
  3. 2 tablespoons cold unsalted butter, cut into small cubes

Instructions: For the Muffins: Step 1: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

Step 2: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3: In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract.

Step 4: Add the wet ingredients to the dry ingredients and gently fold until just combined. Do not overmix.

Step 5: Gently fold in the blueberries.

For the Streusel Topping: Step 6: In a small bowl, combine the flour, sugar, and cold butter cubes. Use your fingers to rub the mixture together until it resembles coarse crumbs.

Assembly: Step 7: Divide the muffin batter evenly among the muffin cups.

Step 8: Sprinkle the streusel topping over each muffin.

Step 9: Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Step 10: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
