Ingredients:

  1. Noodles (200g, cooked and cooled)
  2. Cucumber (1, julienned)
  3. Carrots (1-2, julienned or shredded)
  4. Bell peppers (1-2, thinly sliced)
  5. Red cabbage (1 cup, shredded)
  6. Green onions (3-4, chopped)
  7. Fresh cilantro or mint leaves (a handful, chopped)
  8. Sesame seeds (for garnish, optional)
  9. Grilled chicken, shrimp, or tofu (optional for protein)

For the Dressing:

  1. Soy sauce (3 tablespoons)
  2. Sesame oil (1 tablespoon)
  3. Rice vinegar (2 tablespoons)
  4. Honey or maple syrup (1 tablespoon)
  5. Garlic (1 clove, minced)
  6. Ginger (1 teaspoon, grated)
  7. Salt and pepper (to taste)

Preparation Steps:

  1. In a large bowl, combine the cooked and cooled noodles with julienned cucumber, carrots, sliced bell peppers, shredded red cabbage, chopped green onions, and cilantro or mint.
  2. If adding protein, mix in grilled chicken, shrimp, or tofu.
  3. In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, grated ginger, salt, and pepper to create the dressing.
  4. Pour the dressing over the noodle and vegetable mixture. Toss until everything is well-coated.
  5. Garnish with sesame seeds if desired.
