Ingredients:
For the Salad:
- Noodles (200g, cooked and cooled)
- Cucumber (1, julienned)
- Carrots (1-2, julienned or shredded)
- Bell peppers (1-2, thinly sliced)
- Red cabbage (1 cup, shredded)
- Green onions (3-4, chopped)
- Fresh cilantro or mint leaves (a handful, chopped)
- Sesame seeds (for garnish, optional)
- Grilled chicken, shrimp, or tofu (optional for protein)
For the Dressing:
- Soy sauce (3 tablespoons)
- Sesame oil (1 tablespoon)
- Rice vinegar (2 tablespoons)
- Honey or maple syrup (1 tablespoon)
- Garlic (1 clove, minced)
- Ginger (1 teaspoon, grated)
- Salt and pepper (to taste)
Preparation Steps:
- In a large bowl, combine the cooked and cooled noodles with julienned cucumber, carrots, sliced bell peppers, shredded red cabbage, chopped green onions, and cilantro or mint.
- If adding protein, mix in grilled chicken, shrimp, or tofu.
- In a separate bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, minced garlic, grated ginger, salt, and pepper to create the dressing.
