Cooker Chicken Curry

Ingredients:

  • 1.5 lbs (about 700g) chicken pieces, cleaned
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1/4 cup yogurt
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1/2 cup coconut milk (optional)
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat vegetable oil in the pressure cooker over medium heat.
  2. Add finely chopped onions and sauté until they become golden brown.
  3. Stir in ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes and cook until they become soft and the oil begins to separate.
  5. Mix in turmeric powder, curry powder, ground cumin, ground coriander, red chili powder, and salt. Cook the spices for a couple of minutes to enhance their flavors.
  6. Add yogurt to the mixture and stir well. Cook for another 2-3 minutes.
  7. Add cleaned chicken pieces to the cooker and coat them evenly with the spice mixture.
  8. If using coconut milk, add it at this stage for a creamy texture.
  9. Close the pressure cooker lid without the weight and cook for about 10-12 minutes or until the chicken is tender.
  10. Allow the pressure to release naturally, and then open the lid.
  11. Garnish with fresh coriander leaves.
  12. Serve the Cooker Chicken Curry with rice, naan, or your preferred choice of bread.
