Delicious Quinoa Salad

Ingredients:

For the Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olives, sliced (optional)
  • Salt and pepper to taste

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Fluff quinoa with a fork and let it cool.
  2. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and fresh parsley.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
  4. Pour the dressing over the quinoa and vegetable mixture. Toss until everything is well coated.
  5. If using, sprinkle crumbled feta cheese and sliced olives over the salad.
  6. Adjust salt and pepper to taste.
  7. Chill the quinoa salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  8. Serve the Quinoa Salad as a refreshing side dish or a light and nutritious main course.
