Delicious Quinoa Salad
Ingredients:
For the Salad:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper (any color), diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olives, sliced (optional)
- Salt and pepper to taste
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- In a saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Fluff quinoa with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, and fresh parsley.
- In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the quinoa and vegetable mixture. Toss until everything is well coated.
- If using, sprinkle crumbled feta cheese and sliced olives over the salad.
- Adjust salt and pepper to taste.
- Chill the quinoa salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Serve the Quinoa Salad as a refreshing side dish or a light and nutritious main course.
