Marry Me Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions:

  1. Season the chicken breasts with salt and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Brown the chicken breasts on both sides until golden. Remove them from the skillet and set aside.
  4. In the same skillet, add cherry tomatoes, sun-dried tomatoes, garlic, oregano, thyme, and red pepper flakes (if using). Cook for a few minutes until the tomatoes start to soften.
  5. Pour in the chicken broth, scraping the bottom of the skillet to incorporate any browned bits.
  6. Return the chicken breasts to the skillet, nestling them into the tomato mixture.
  7. Cover the skillet and simmer over medium heat for about 15-20 minutes or until the chicken is cooked through.
  8. Remove the chicken from the skillet and set aside.
  9. Add heavy cream and Parmesan cheese to the tomato mixture, stirring until the sauce is creamy.
  10. Return the chicken to the skillet, spooning the sauce over the top.
  11. Garnish with fresh basil or parsley.

Serve the Marry Me Chicken over pasta, rice, or with crusty bread for a delightful meal that's sure to impress!
