Marry Me Chicken

Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley for garnish
Instructions:
- Season the chicken breasts with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat.
- Brown the chicken breasts on both sides until golden. Remove them from the skillet and set aside.
- In the same skillet, add cherry tomatoes, sun-dried tomatoes, garlic, oregano, thyme, and red pepper flakes (if using). Cook for a few minutes until the tomatoes start to soften.
- Pour in the chicken broth, scraping the bottom of the skillet to incorporate any browned bits.
- Return the chicken breasts to the skillet, nestling them into the tomato mixture.
- Cover the skillet and simmer over medium heat for about 15-20 minutes or until the chicken is cooked through.
- Remove the chicken from the skillet and set aside.
- Add heavy cream and Parmesan cheese to the tomato mixture, stirring until the sauce is creamy.
- Return the chicken to the skillet, spooning the sauce over the top.
- Garnish with fresh basil or parsley.
Serve the Marry Me Chicken over pasta, rice, or with crusty bread for a delightful meal that's sure to impress!
