Air Fryer Garlic & Rosemary Chips with Aioli

Ingredients:

For the Garlic & Rosemary Chips:

  • 4 large russet potatoes, washed and sliced into thin rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • Salt and black pepper to taste

For the Aioli:

  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions:

For the Garlic & Rosemary Chips:

  1. Preheat your air fryer to 375°F (190°C).
  2. In a large bowl, toss the potato slices with olive oil, minced garlic, chopped rosemary, salt, and black pepper until evenly coated.
  3. Place the seasoned potato slices in a single layer in the air fryer basket, ensuring they are not overcrowded.
  4. Cook in the air fryer for 15-20 minutes or until the chips are golden brown and crispy, shaking the basket halfway through for even cooking.
  5. Remove the chips from the air fryer and let them cool slightly.

For the Aioli:

  1. In a small bowl, combine mayonnaise, minced garlic, Dijon mustard, lemon juice, salt, and black pepper. Mix until well combined.
  2. Serve the Garlic & Rosemary Chips with the prepared aioli for dipping.
