Kerala Egg Roast

Ingredients:

  • 6 hard-boiled eggs
  • 2 onions, thinly sliced
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Curry leaves for garnish
  • Salt to taste
  • Cooking oil

Cooking Steps:

Step 1: Heat oil in a pan, add mustard seeds, and let them splutter.

Step 2: Add sliced onions and sauté until golden brown.

Step 3: Add ginger-garlic paste, green chilies, and cook until the raw aroma disappears.

Step 4: Toss in chopped tomatoes, spices (turmeric, red chili, coriander powder), and cook until the tomatoes are soft.

Step 5: Gently place the hard-boiled eggs into the masala, ensuring they are well-coated.

Step 6: Sprinkle garam masala, garnish with curry leaves, and let it simmer until the flavors meld.

Step 7: Serve the Kerala Egg Roast hot, paired with rice or bread for a delightful meal.
