Red Pumpkin Stew

Ingredients:

  • 2 cups red pumpkin, peeled and cubed
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Cooking Steps:

Step 1: In a pan, heat oil and add cumin seeds. Allow them to splutter.

Step 2: Add finely chopped onions, minced garlic, and grated ginger. Sauté until the onions are translucent.

Step 3: Add chopped tomatoes and cook until they become soft.

Step 4: Stir in coriander powder, turmeric powder, red chili powder, and salt. Cook the masala until the oil starts to separate.

Step 5: Add cubed red pumpkin and mixed vegetables to the masala. Mix well.

Step 6: Pour enough water to cover the vegetables and bring the stew to a boil.

Step 7: Lower the heat, cover the pan, and simmer until the pumpkin and vegetables are tender.

Step 8: Sprinkle garam masala and adjust the seasoning according to taste.

Step 9: Garnish with fresh coriander leaves before serving.
