Ingredients:

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 and 1/4 cups milk (dairy or plant-based)
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • Maple syrup, fresh fruits, or toppings of your choice

Cooking Steps:

Step 1: In a blender or food processor, grind the old-fashioned oats until you achieve a coarse flour-like consistency.

Step 2: In a large mixing bowl, combine the ground oats, all-purpose flour, sugar, baking powder, baking soda, and salt.

Step 3: In a separate bowl, whisk together milk, melted butter or oil, and vanilla extract.

Step 4: Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

Step 5: Let the pancake batter rest for about 5 minutes to allow the oats to absorb some of the liquid.
