Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Cooking oil or additional butter for greasing the pan
Steps
Step 1: In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Step 2: In a separate bowl, whisk together buttermilk, milk, egg, and melted butter.
Step 3: Pour the wet ingredients into the dry ingredients and stir until just combined. Some lumps are okay; do not overmix.
Step 4: Preheat a griddle or non-stick pan over medium heat. Grease with cooking oil or butter.
Step 5: Pour 1/4 cup portions of batter onto the griddle for each pancake.
Step 6: Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Step 7: Repeat until all the batter is used.
