Crab Biryani Koli Style

Ingredients:
- 2 cups basmati rice (400 kcal)
- 500g crab, cleaned and cracked
- 1 cup yogurt
- 2 large onions, thinly sliced
- 3 tomatoes, chopped
- 1/4 cup cooking oil
- 2 tablespoons ghee
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon biryani masala
- Fresh coriander and mint leaves for garnish
- Salt to taste
Instructions:
Step 1: Marinate the Crab
- In a bowl, mix yogurt, turmeric powder, red chili powder, and salt.
- Marinate the crab in this mixture for at least 30 minutes.
Step 2: Sauté Aromatics
- In a large pot, heat oil and ghee.
- Sauté sliced onions until golden brown.
- Add ginger-garlic paste and cook until the raw aroma disappears.
Step 3: Add Tomatoes and Spices
- Stir in chopped tomatoes and cook until softened.
- Add garam masala, biryani masala, and adjust salt to taste.
Step 4: Cook Crab
- Add the marinated crab to the pot. Cook until the crab is partially done.
Step 5: Layering Rice and Crab
- Parboil basmati rice and layer it over the partially cooked crab.
- Sprinkle ghee and garnish with fresh coriander and mint leaves.
Step 6: Dum Cooking
- Cover the pot with a tight-fitting lid. Cook on low heat for 20-25 minutes.
Step 7: Serve and Enjoy
- Gently fluff the Crab Biryani with a fork.
- Serve hot, savoring the exquisite flavors of this coastal delicacy.
