Palak Soup - Healthy Weight Loss Soup

Ingredients:

  • 2 cups fresh spinach leaves, washed and chopped
  • 1 onion, finely chopped
  • 1 medium-sized potato, peeled and diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Lemon wedges for garnish (optional)

Steps:

Step 1: In a pot, heat olive oil over medium heat. Add cumin seeds and let them splutter.

Step 2: Add minced garlic and chopped onions. Sauté until onions are translucent.

Step 3: Add diced potatoes and continue cooking for a few minutes.

Step 4: Pour in vegetable broth and bring the mixture to a boil. Reduce heat to simmer, covering the pot until the potatoes are tender.

Step 5: Add chopped spinach to the pot and cook until the spinach wilts.

Step 6: Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender and blend until smooth, then return to the pot.

Step 7: Season the soup with salt and black pepper to taste.

Step 8: Simmer for an additional 5-7 minutes to allow flavors to meld.

Step 9: Serve hot, optionally garnishing with a squeeze of fresh lemon juice.
