Ingredients:

For the Hollandaise Sauce:

  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • Salt and cayenne pepper to taste

For the Eggs Florentine:

  • 4 large eggs
  • 2 English muffins, split and toasted
  • 2 cups fresh baby spinach, sautéed
  • Salt and black pepper to taste
  • Fresh chives for garnish

Steps:

For the Hollandaise Sauce:

Step 1: In a heatproof bowl, whisk together egg yolks and lemon juice.

Step 2: Place the bowl over a pot of simmering water (double boiler), ensuring the water doesn't touch the bottom of the bowl.

Step 3: Whisk the egg yolk mixture continuously until it thickens.

Step 4: Slowly drizzle in the melted butter while whisking continuously until the sauce is smooth and thickened.

Step 5: Season with salt and cayenne pepper to taste. Remove from heat and keep warm.

For the Eggs Florentine:

Step 6: Poach the eggs to your desired level of doneness.

Step 7: Sauté fresh baby spinach until wilted. Season with salt and black pepper.

Step 8: Toast the English muffins until golden brown.

Step 9: Assemble by placing sautéed spinach on each English muffin half.

Step 10: Gently place a poached egg on top of the spinach.

Step 11: Spoon hollandaise sauce generously over each egg.

Step 12: Garnish with fresh chives.
