Perfect Souffle

Ingredients:

For a Sweet Soufflé (Chocolate Soufflé):

  • 4 ounces (about 120g) bittersweet chocolate, chopped
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup whole milk
  • 4 large egg yolks
  • 1/2 cup granulated sugar, divided
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 5 large egg whites
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C). Butter and sugar the ramekins or soufflé dish.
  2. In a heatproof bowl, melt the chocolate and butter together over simmering water or in the microwave. Stir until smooth and set aside.
  3. In a saucepan, whisk together flour and milk over medium heat to create a thick roux. Allow it to cool slightly.
  4. Whisk in the egg yolks one at a time into the roux. Add half of the sugar, vanilla extract, and a pinch of salt. Stir in the melted chocolate mixture.
  5. In a separate clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue to beat until glossy stiff peaks form.
  6. Gently fold a third of the egg whites into the chocolate mixture to lighten it. Carefully fold in the remaining egg whites until no white streaks remain.
  7. Spoon the mixture into the prepared ramekins or soufflé dish, filling just below the rim.
  8. Run your thumb around the edge of each dish to create a groove. This helps the soufflé rise evenly.
  9. Bake in the preheated oven for 18-20 minutes or until the soufflés are puffed and set.
  10. Dust with powdered sugar if desired and serve immediately.

Mastering the Perfect Soufflé may take a few attempts, but the reward of a light and fluffy dessert is worth the effort!
