Perfect Souffle

Ingredients:
For a Sweet Soufflé (Chocolate Soufflé):
- 4 ounces (about 120g) bittersweet chocolate, chopped
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 cup whole milk
- 4 large egg yolks
- 1/2 cup granulated sugar, divided
- 1 teaspoon vanilla extract
- Pinch of salt
- 5 large egg whites
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the oven to 375°F (190°C). Butter and sugar the ramekins or soufflé dish.
- In a heatproof bowl, melt the chocolate and butter together over simmering water or in the microwave. Stir until smooth and set aside.
- In a saucepan, whisk together flour and milk over medium heat to create a thick roux. Allow it to cool slightly.
- Whisk in the egg yolks one at a time into the roux. Add half of the sugar, vanilla extract, and a pinch of salt. Stir in the melted chocolate mixture.
- In a separate clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue to beat until glossy stiff peaks form.
- Gently fold a third of the egg whites into the chocolate mixture to lighten it. Carefully fold in the remaining egg whites until no white streaks remain.
- Spoon the mixture into the prepared ramekins or soufflé dish, filling just below the rim.
- Run your thumb around the edge of each dish to create a groove. This helps the soufflé rise evenly.
- Bake in the preheated oven for 18-20 minutes or until the soufflés are puffed and set.
- Dust with powdered sugar if desired and serve immediately.
Mastering the Perfect Soufflé may take a few attempts, but the reward of a light and fluffy dessert is worth the effort!
