Coconut Chickpea Curry

Ingredients:

  • 2 cans of chickpeas, drained and rinsed
  • 1 can of coconut milk
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1-inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Steps:

Step 1: In a pan, sauté onions, garlic, and ginger until fragrant.

Step 2: Add tomatoes and cook until softened.

Step 3: Stir in curry powder, cumin, coriander, and turmeric.

Step 4: Pour in coconut milk, and let it simmer.

Step 5: Add chickpeas, salt, and pepper. Cook until chickpeas are heated through.

Step 6: Garnish with fresh cilantro.
