Perfect Apple Pie

Ingredients:

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, cold and cut into small cubes
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/4 to 1/2 cup ice water

For the Apple Filling:

  • 6-7 cups peeled, cored, and sliced apples (mix of Granny Smith and Honeycrisp)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 3 tablespoons cornstarch

For Assembly:

  • 1 egg (for egg wash)
  • Granulated sugar (for sprinkling on top)

Cooking Steps:

Pie Crust:

Step 1: In a food processor, combine flour, salt, and sugar. Add cold butter and pulse until the mixture resembles coarse crumbs.

Step 2: With the processor running, gradually add ice water until the dough just comes together. Be careful not to overmix.

Step 3: Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling:

Step 4: Preheat the oven to 425°F (220°C).

Step 5: In a large bowl, toss sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch until well coated.

Assembly:

Step 6: On a floured surface, roll out one disc of chilled pie dough to fit a 9-inch pie dish. Transfer the dough to the dish.

Step 7: Fill the pie crust with the apple filling, spreading it evenly.

Step 8: Roll out the second disc of pie dough and place it over the apples. Trim and crimp the edges to seal the pie.

Step 9: Beat the egg and brush it over the top crust. Sprinkle with granulated sugar.

Step 10: Cut a few slits in the top crust to allow steam to escape.

Step 11: Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-55 minutes or until the crust is golden brown and the filling is bubbly.

Step 12: Allow the pie to cool for at least 2 hours before serving.
