Ingredients:

  • 2 tablespoons maple syrup or sweetener of choice
  • 1 teaspoon instant coffee or espresso powder
  • 1/2 teaspoon vanilla extract

For the Tiramisu Layers:

  • 1/2 cup strong brewed coffee, cooled
  • Ladyfinger cookies (as needed)
  • Mascarpone cheese or Greek yogurt for layering
  • Cocoa powder for dusting

Cooking Steps:

Step 1: Make the Chia Pudding Base In a bowl, whisk together chia seeds, milk, maple syrup, instant coffee or espresso powder, and vanilla extract. Ensure that the chia seeds are well combined. Let it sit for a few minutes and then whisk again to prevent clumps. Refrigerate the mixture for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and create a pudding-like consistency.

Step 2: Brew Coffee Prepare a strong cup of coffee and let it cool to room temperature.
