Ingredients:

For the Sourdough Starter:

  • 1 cup active sourdough starter
  • 1 1/2 cups all-purpose flour
  • 3/4 cup lukewarm water

For the Dough:

  • 1 cup active sourdough starter
  • 1 1/2 cups lukewarm milk
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 cups all-purpose flour
  • Cornmeal for dusting

Cooking Steps:

Step 1: Prepare Sourdough Starter In a bowl, combine 1 cup of active sourdough starter, 1 1/2 cups of all-purpose flour, and 3/4 cup of lukewarm water. Mix well, cover, and let it sit at room temperature for about 4-8 hours, or until it's active and bubbly.

Step 2: Make Dough In a large mixing bowl, combine 1 cup of the prepared sourdough starter, lukewarm milk, melted butter, sugar, and salt. Gradually add 4 cups of all-purpose flour, mixing until a soft dough forms.

Step 3: Knead and Rise Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Step 4: Shape Muffins Punch down the risen dough and turn it out onto a floured surface. Roll it out to about 1/2-inch thickness. Using a round cutter, cut out muffins. Place them on a baking sheet dusted with cornmeal.

Step 5: Final Rise Cover the muffins with a kitchen towel and let them rise for an additional 30-45 minutes.

Step 6: Cook on Griddle Preheat a griddle or skillet over medium-low heat. Cook the muffins for 6-8 minutes on each side, or until they are golden brown and cooked through.

Step 7: Cool and Enjoy Allow the Sourdough English Muffins to cool on a wire rack. Once cooled, use a fork to split them open and toast to perfection. Enjoy with your favorite spreads or as the base for a delicious breakfast sandwich.
