Winter Special Palak & Methi Chicken

Ingredients:

  • 500g chicken, cut into pieces
  • 2 cups fresh spinach (palak), finely chopped
  • 1 cup fresh fenugreek leaves (methi), chopped
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Cooking Steps:

  1. In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.
  4. Incorporate the chicken pieces into the pan. Cook until the chicken is browned on all sides.
  5. Stir in the pureed tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook until the oil separates from the masala.
  6. Add the finely chopped spinach (palak) and fenugreek leaves (methi) to the chicken. Mix thoroughly.
  7. Cover the pan and let it simmer on low heat for about 15-20 minutes until the chicken is tender and cooked through.
  8. Sprinkle garam masala over the dish and stir gently to combine all the flavors.
  9. Garnish with fresh coriander leaves.
  10. Serve the Winter Special Palak & Methi Chicken with steamed rice or warm rotis.
