Winter Special Palak & Methi Chicken

Ingredients:
- 500g chicken, cut into pieces
- 2 cups fresh spinach (palak), finely chopped
- 1 cup fresh fenugreek leaves (methi), chopped
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 2 tablespoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves for garnish
Cooking Steps:
- In a large pan, heat oil over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.
- Incorporate the chicken pieces into the pan. Cook until the chicken is browned on all sides.
- Stir in the pureed tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook until the oil separates from the masala.
- Add the finely chopped spinach (palak) and fenugreek leaves (methi) to the chicken. Mix thoroughly.
- Cover the pan and let it simmer on low heat for about 15-20 minutes until the chicken is tender and cooked through.
- Sprinkle garam masala over the dish and stir gently to combine all the flavors.
- Garnish with fresh coriander leaves.
- Serve the Winter Special Palak & Methi Chicken with steamed rice or warm rotis.
