Vegetable Korokke

Ingredients:

  • 2 large potatoes, peeled, boiled, and mashed
  • 1 cup mixed vegetables (carrots, peas, corn), finely chopped
  • 1/2 cup onion, finely chopped
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Breadcrumbs for coating
  • Vegetable oil for frying
  • Tonkatsu sauce or Worcestershire sauce for serving (optional)

Cooking Steps:

Step 1: In a pan, sauté finely chopped onions in butter until translucent.

Step 2: Add mixed vegetables to the pan and cook until they are tender.

Step 3: Combine mashed potatoes, sautéed vegetables, garlic powder, onion powder, salt, and pepper. Mix well.

Step 4: Shape the mixture into oval or round patties.

Step 5: Roll each patty in flour, dip into beaten eggs, and coat with breadcrumbs.

Step 6: Heat vegetable oil in a pan for deep frying.

Step 7: Fry the korokke until they are golden brown and crispy on all sides.

Step 8: Drain excess oil by placing korokke on paper towels.

Step 9: Serve the Vegetable Korokke hot with tonkatsu sauce or Worcestershire sauce for dipping.
