Pineapple Custard Pudding
Ingredients:
- 2 cups fresh pineapple, finely chopped
- 1 cup granulated sugar
- 1/4 cup water
- 3 tablespoons cornstarch
- 4 large egg yolks
- 2 cups whole milk
- 1 teaspoon vanilla extract
- Pinch of salt
- Whipped cream and pineapple slices for garnish (optional)
Cooking Steps:
Step 1: In a saucepan, combine chopped pineapple, sugar, and water. Cook over medium heat, stirring occasionally, until the pineapple releases its juices and the sugar dissolves.
Step 2: In a small bowl, mix cornstarch with a few tablespoons of water to create a smooth slurry.
Step 3: Add the cornstarch slurry to the pineapple mixture and continue to cook, stirring constantly, until the mixture thickens. Remove from heat and let it cool.

Step 8: Transfer the pudding to serving bowls or glasses and refrigerate for at least 2 hours or until set.
