Lentils Pie With Sweet Potato Mash
Ingredients:
For the Lentils Filling:
- 1 cup dry green or brown lentils, rinsed and drained
- 3 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 1/4 cup tomato paste
- 1 cup frozen peas (optional)
For the Sweet Potato Mash:
- 3 large sweet potatoes, peeled and diced
- 2 tablespoons unsalted butter
- 1/4 cup milk (or non-dairy alternative)
- Salt and nutmeg to taste
For Assembly:
- Puff pastry sheets (store-bought or homemade)
- 1 egg, beaten (for egg wash)
Cooking Steps:
For the Lentils Filling:
Step 1: In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 25-30 minutes or until lentils are tender. Drain any excess liquid.
Step 2: In a large skillet, heat olive oil over medium heat. Add chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened.
