- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup shelled pistachios, finely ground (approx. 520 kcal)
- For Pistachio Topping:
- ½ cup shelled pistachios, roughly chopped
Instructions:
Step 1: Prepare the Crust
- In a bowl, mix graham cracker crumbs, melted butter, and sugar.
- Press the mixture into the base of a springform pan. Chill while preparing the filling.
Step 2: Make the Pistachio Cheesecake Filling
- Preheat the oven to 325°F (160°C).
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, incorporating each.
- Mix in sour cream, vanilla extract, and finely ground pistachios.
